  1. Get 1 lbs ground beef
  2. Prepare 1 lbs ground pork
  3. Prepare 1 lbs ground lamb

  7. Get 1-2 Tbsp Calabrian chili paste or red curry paste
  8. Take 1 cup Parmigiano-Reggiano

  10. Prepare 1 bushel Parsley (rough chop)
  11. Take 1 tsp Salt & pepper each (then to taste in sauce)

Crumble beef over mixture and mix well. These plant-based meatballs with spinach, nutritional yeast, and vegan bread crumbs deliver lots of flavor. We like more of a crunchy, dry meatball so these are baked in the oven without sauce but they can be simmered on the stovetop in marinara sauce, as well. I prefer meatballs slightly larger than a golf ball.

Instructions to make Meatballs:
  1. Put all the meat in a bowl and coat with eggs
  2. Once sticky with eggs, add the salt, pepper, garlic, chili paste and mix by hand.
  3. Add the Parmigiano-Reggiano and breadcrumbs and mix
  4. Then add the milk and keep mixing
  5. Finally add a lot of parsley and mix in
  6. Coat a large baking sheet with butter and stack the meatballs tightly on the pan (45 grams each, about an ice cream scoop size)
  7. Roast them at 475^F for 6-7 minutes, rotating the pan once or twice (or fry in a pan)
  8. Submerge the meatballs in sauce and simmer for an hour.
