Hello everybody, it is John, welcome to my recipe page. Today, we’re going to make a special dish, courgetti and meatballs. It is one of my favorites. For mine, I’m gonna make it a little bit unique. This will be really delicious.

Courgetti and Meatballs is one of the most favored of recent trending foods on earth. It’s enjoyed by millions daily. It’s simple, it’s fast, it tastes yummy. They’re nice and they look fantastic. Courgetti and Meatballs is something which I’ve loved my whole life.

Mix together with your hands, then shape into small meatballs - roughly the size of a cherry tomato. Meanwhile, tip the tomatoes into a roasting tin with the whole garlic cloves and the remaining oil. Remove the meatballs from the pan and set aside, while you cook you the remaining meatballs. Firstly, you want to prepare the meatballs, so in a large bowl add the turkey and pork mince, cheese, grated garlic, Italian seasoning, stock cube, red chilli pepper flakes, chopped coriander and black pepper.

To begin with this recipe, we must first prepare a few components. You can cook courgetti and meatballs using 10 ingredients and 9 steps. Here is how you can achieve that.

The ingredients needed to make Courgetti and Meatballs:
  1. Get meatballs (lamb or beef)
  2. Take garlic cloves, 2 whole and unpeeled, 2 crushed
  3. Prepare large courgettes
  4. Take créme fraiche
  5. Prepare lemon zest
  6. Take pine nuts
  7. Get basil
  8. Get grated parmesan
  9. Make ready olive oil
  10. Make ready vegetable oil (for frying)

There is something seriously satisfying about a big bowl of courgetti and meatballs smothered in a fresh tomato sauce. I use a blend of pork and beef mince flavoured with garlic, parsley and oregano to make these meatballs. Remove from the oven and cover with foil. Put to one side until ready to cook.

Instructions to make Courgetti and Meatballs:
  1. Pre-heat oven to 200C/180C fan/gas 6.
  2. Toast your pine nuts in a frying pan. Don't use any oil and keep them on for 2-3 mins, until golden. Remove them from the pan and set aside for later.
  3. Heat 1 tbsp of oil in a large frying pan, add the meatballs and fry for 10-15 mins until golden brown.
  4. Meanwhile, tip the tomatoes into a roasting tin with the whole garlic cloves and the a glug or two of olive oil. Season and roll around the tin until well coated in oil. Roast for 15 mins.
  5. While the meatballs and tomatoes cook, use a spiraliser or julienne peeler to noodlify your courgettes.
  6. Once the meatballs have cooked, tip them into the roasting tin with the tomatoes. Fish out the garlic from the roasting tin and set aside. If you feel like your tomatoes need a bit longer to roast, you can return the tin (meatballs included) to the oven for as long as needed.
  7. Get a fresh frying pan (or wash the old one). Heat another 1 tbsp oil in the pan, squeeze the garlic cloves from their skins into the pan and mash with a fork.
  8. Once the pan is sizzling, add the crème fraîche, lemon zest and some seasoning. Add the courgetti and toss in the pan for 30 secs until warmed through. Don't leave it any longer or the courgette will wilt.
  9. Remove the pan from the heat, and tip in the meatballs, tomatoes and any juices from the tin. Toss together and scatter with pine nuts, basil and Parmesan.

Remove from the oven and cover with foil. Put to one side until ready to cook. Put the turkey mince into a mixing bowl with the chopped onion, garlic, Worcestershire sauce, beaten egg and a good pinch of salt and pepper. Mix everything together until thoroughly combined. Crispy & delicious tuna meatballs are served atop noodles & 'zoodles' (courgette/zucchini noodles) with an easy homemade tomato sauce.
