When the onions turn translucent add in the ginger- garlic- green chilli paste and mix well until the raw smell is no longer there. Add in the tomatoes & saute well.
- When the tomato becomes mushy add in the rice and saute for 2 mins in low flame. Now add the coriander leaves, saffron strands and mix well. To enhance the flavours chicken or veg stock can be added but it is purely optional. Add in 2 3/4 cup of water and bring it to boil under high flame. Add a pinch of turmeric powder & salt as required. Close the lid and cook till one whistle. Immediately move the cooker to the lowest flame burner, simmer it to the lowest & cook for another 4 mins.
- Switch off the flame & set the cooker aside for the pressure to go down. Open the lid and add the birista & mix the rice gently with the spatula. Garnish with fried raisens & cashew nuts. Serve hot with any curry of your choice
