  2. Make ready 2 kg Quality Shoulder of Lamb

  12. Get 2 tbsp Corn Flour

Peel and quarter the onions and garlic cloves, peel and roughly chop the carrots, trim and roughly chop the celery, and wash, trim and roughly chop the leek. Rub the lamb with oil, sea salt and freshly ground black pepper and put it into a roasting tray. Ideally the stock should be around half way up the shoulder of lamb. After the meat is cooked, remove it from the slow cooker and transfer it to your favourite roasting tin.

  9. Once cooked, remove the lamb and mash the left over contents of the seasonings and veg until fine, add some pinches of corn flour until the gravy has thickened and serve over the lamb
